Refrigerator Pickled Veggies






What you will need

2 Kirby cucumbers sliced
6 stalks of celery sliced
3.5 cups of distilled white vinegar
1.5 water
1 tsp of salt
3 tblsp white sugar
1 tblsp of "Trader Joe's Everyday Seasoning" which basically includes things like sea salt, mustard seed, black peppercorns, coriander, garlic, onion,  & chili peppers. It comes in a grinder but I have to take the lid off to get the tablespoon of the ingredients.

Or you could just add which ever spices you like its really to your taste this is just what I did for this recipe.



What you will do


Heat small saucepan  over medium high heat. Add vinegar, salt, sugar, & TJ's Everyday Seasoning to the pan and cook until it begins to simmer and sugar dissolves.
Slice the cucumbers and the celery add the slices to sterile jars, you can put them together but I like to pickle them separately.
Pour the enough simmering brine over the vegetables (enough to cover all the cucumbers) and store in the fridge for no less than 2 days.
